As some of our courgettes were dangerously close to losing their “ette” status -courge is French for marrow, ette is a diminutive- we looked around for a different recipe.
Last week we had spent some time transforming courgettes from the garden to freezer fodder, yesterday we just wanted a quick meal.
Although the byline for this recipe by Angela Hartnett is ; ” Forget the courgette – marrow makes a fine combination with strong, spicy flavours” we adapted this recipe successfully using our overgrown harvest.
