Finally got round to pickling the beetroot today- boy is it a messy affair! And always panic about whether the jars are properly sterilised.
Used the leaves to make a “spinach” – a covering of water, some salt, pepper and nutmeg. Destined for the freezer to be revived with a nob of butter. I am still astounded by how such a large amount of leaves can be reduced to such a small quantity of spinach.
Meanwhile on tonight’s menu- shoulder of lamb. Using this Jamie Oliver recipe but having sweet potato mash instead of smashed veg.
